Favourite cookbooks

I don’t know about you but I have a number of cookbooks. However, I’m also someone who doesn’t use them as often as I should.

When I first get a cookbook I read through it and then make two or three recipes and they tend to be the things I always cook from them. I’ll look through them for inspiration but seem to gravitate to the tried and tasted. I really need to use my cookbooks more often!

There are, however, two books I have been using a lot recently and have never been disappointed with anything I have made. Both books are by Chloe Coscarelli.

Everything I have made from Chloe’s Kitchen and Chloe’s Vegan Italian Kitchen has been easy, tasty and very quick. I love the avocado pesto pasta, her red wine seitan panini and her black eyed bean skillet. Her desserts are rather nice too, espresso chocolate chips cookies or zucchini chocolate chip muffins anyone?

Both books have great pasta dishes like Alfredo sauce made from cashew nuts, sundried tomato cream sauce and ricotta stuffed shells.

None of her dishes are very complicated and as long as you are happy with American cup measurements then I would thoroughly recommend them to anyone new to vegan cooking.
